I think this article has some nice nuance about px vs em in regards to text accessibility. It explains that neither unit is inherently more accessible than the other, but different ones are better to use in different cases. It provides nice examples for each case. Font size is generally best defined in rem, padding/margins in px, but vertical padding/magrins before/after paragraphs is best in em. (The article explains why)
